India’s foodservice market reached US$57.2 billion in 2023, having recovered sharply from a 38.2% contraction in 2021. At an 11.3% CAGR through 2026, the sector is projected to cross US$78.8 billion, positioning it as one of the fastest-growing consumption stories in emerging Asia.
What makes the current growth cycle structurally distinct is the organised segment’s accelerating capture of market share. In 2023, the unorganised segment still commanded over 50% of the total market. That majority is narrowing. With the organised segment expanding at 15% CAGR during 2023-26, a crossover to organised majority share is projected by 2025-26. Two format categories are driving that shift disproportionately.
QSR and Cloud Kitchens: The Growth Architecture
QSR and casual dining restaurants together constitute roughly 78% of the organised market. Within that, QSR carries the highest growth mandate, with an 18% CAGR projected through 2026. Penetration remains low relative to developed economies, which sustains the runway. At the same time, the cloud kitchen format, built on asset-light delivery-only operations, is growing at 17% CAGR through 2026 — a trajectory that attracted US$175 million in funding to Rebel Foods from Qatar Investment Authority as recently as 2021.
The format segmentation itself is becoming less rigid. Brands like Pizza Hut are migrating from casual dining into QSR operating models, while players such as Innerchef are running cloud kitchens alongside physical cafés. Aggregator dependency is also shifting. Global QSR chains are investing in proprietary delivery infrastructure to reduce commission exposure to Zomato and Swiggy.
Underlying demand drivers remain intact: rising urban disposable incomes, millennial appetite for diverse cuisines, deeper smartphone penetration, and foodservice expansion beyond malls into offices, hospitals, and airports.
The organised segment’s inflection toward majority share, combined with format convergence and delivery ecosystem maturation, makes the 2024-26 window a critical juncture for brands, operators, and investors tracking India’s foodservice market.
